Been making the Egg Roll Bowls. A winner. So good!! So easy.

Our go-to emergency meal is always breakfast for dinner. Toast, eggs, and fruit? Bacon or heat up frozen waffles if you’re feeling fancy? Done!

It’s so easy, nutritious (sometimes I can even sneak a vegetable in scrambled eggs or an omelet?! Or more likely, serve leftover veggies on the side for myself), and everyone will actually eat it. Win, win, win.

SAME. That's another good one. Sometimes I'll do bagel breakfast sandwiches for dinner. One kid makes bagels. The other makes eggs. I make the bacon (in the microwave) and viola!!

Before I had to go gluten free, my favorite emergency supper was what my kids impressively called my Tour of Italy:

1. frozen Costco tortellini boiled up, drained and returned to the pot. Stir in a brick of Boursin cheese (the one in the green box). The Boursin melts into the yummiest “sauce” on the pasta.

2. While I was quickly making the tortellini, I would also bake frozen toasted cheese filled ravioli in the oven and heated up a little marinara (or Traditional Prego) in a small pan to drizzle on top or use as dipping sauce. If you buy the cheese filled ones, the kids say they taste like mozzarella sticks in a restaurant.

3. When the ravioli came out of the oven, I would immediately put in either garlic bread sticks or cheesy garlic bread. They only take 5 minutes, and you’re done.

My family loved it, it made enough that if we had unexpected company I could feed a bigger group, and other than the Boursin (which I like to keep on hand in the cheese drawer) everything else just comes right out of the freezer. So I would just keep all the ingredients on hand all winter for an emergency meal that everyone loved.

We are a big fan of bell pepper nachos! Load them up all the same ways but get more veggies in - so good!
