What’s for dinner?
I’ve been feeding people in this house for eighteen years. EIGHTEEN. And yet somehow, every day, the question arrives fresh and new, as if dinner has never occurred before in the history of our family
So here’s what changed everything: on Sunday mornings, before anyone else is awake and I have roughly 22 minutes of silence, I plan the whole week. Every dinner. Done. Decided. And when someone asks “what’s for dinner?” I have an answer at the ready.
This week’s meal plan comes straight from reader favorites from The Simplified Cookbook — these are the recipes I actually make for my actual family, the ones that pass the picky-husband test and the teenager test and the “I’m hungry at 4pm and I already ate a snack but I’m still going to make this your problem” test.

I love that cookbook! Great choices!
These look so good! I make the white enchiladas but cheat and use frozen chicken taquitos so I don’t have to roll them - it makes such a quick and tasty dinner.
